Costa Rica Goes Locavore – NYTimes.com September 26, 2012

The locavore trend has official support. The country’s Club de la Gastronomía Epicúrea recently proposed a national plan to promote local ingredients and more healthful eating. Its president, Alfredo Echeverría, said that Costa Rica’s restaurant scene has exploded in recent years thanks to a growing class of young professionals who eat out more often. He said the plan is a response to a “globalization of taste.”

“The problem is when you have franchises duplicating, repeating,” he said. “It’s not a problem if you want to use the same recipe all over the world. But use local ingredients.”
